Zucchini Patties

3 cups grated (with peel on) zucchini
¼ cup finely chopped onion
5 sun dried tomatoes (softened in boiling water for 10 minutes), chopped
2 large egg whites
2/3 cup dry fine bread crumbs
1 tbsp low fat salad dressing (or mayonnaise)
2 tbsp whole wheat flour
1 clove garlic, minced
1/8 tsp dried oregano
1/8 tsp dried sweet basil
½ tsp salt
1/8 tsp pepper
Combine all ingredients in a large bowl. Mix well to moisten bread crumbs. Form into patties, using ¼ cup for each. Heat lightly greased non-stick skillet until hot. Cook patties for 3-4 minutes per side until crisp and golden. Makes 12 patties. Can be served hot or cold.
