Banana Chocolate Chip Cookies
Ingredients:
1 cup butter
1 cup brown sugar
2 eggs
1 tsp. Vanilla
3 medium mashed ripe bananas
3 cups flour (1.5 cup organic all purpose & 1.5 cup organic spelt flour or whole wheat)
2 heaping tsp. Baking powder
½ tsp. Baking soda
2 heaping tsp. Cinnamon
2 cups semi-sweet or milk chocolate chips
1.5 cups chopped nuts (walnuts, pecans)
If desired, ½ cup flaked coconut
Instructions:
Mix all dry ingredients; flour, baking powder, baking soda, cinnamon
In separate bowl, mix wet ingredients. First by softening butter, then mix with brown sugar. Beat eggs gently, add to bowl. Mash bananas and add to bowl. Add vanilla.
Mix dry ingredients with wet.
Add chocolate chips, nuts and coconut (if desired)
Using a ¼ cup measuring cup(or less if you want smaller cookies), scoop out dough and place on non-stick cookie sheet approximately 1.5 to 2” apart.
Bake at 350 degrees for 12 to 14 minutes or until golden on top and bottom.
